DETEKSI FORMALIN PADA TAHU MENGGUNAKAN EKSTRAK ANTOSIANIN DARI KULIT NAGA (Hylocereus polyrhizus)

Introduction: Tofu is one of food that much liked by the public, because it has a relatively high nutritional content and low price, however, tofu also often given formalin unscrupulous producers with aim extending shelf life maintaining quality so remains visible good. Objective: to determine effectiveness dragon fruit peel extract in detecting formaldehyde tofu. Method: This research an experimental research. The sampling technique used purposive sampling. sample white There were 3 treatments repetitions consisting P1 (5%), P2 (10%), P3 (15%). Results: results showed (15% anthocyanin skin) was most effective 7 positive samples containing formalin. Conclusion: Anthocyanin from 15% concentartion as detector food.
